Smoking food as a preservation method predates refrigeration by centuries in North America. The smokehouse became a fixture of Southern and Appalachian cooking culture, and its influence carries forward in American barbecue traditions that remain deeply regional today — the wood used, the cut of meat, and the sauce (or absence of it) all vary by geography.
